Opened in March 2010, Sprig & Vine is a 51-seat gourmet vegan restaurant in New Hope, Pennsylvania, serving lunch, dinner and brunch. We are passionate about creating quality food, service and ambiance and strive to provide each guest with a memorable dining experience. Our kitchen’s mission is showcase creatively prepared local & seasonal vegetables and to surprise guests by pushing the boundaries of vegetable cuisine by bringing vegetables to the spotlight. Sprig & Vine’s atmosphere blends casual and upscale dining and our guests are welcome to dine in casual or formal attire.
THE FOOD & INGREDIENTS
Our food is 100% vegan (no animal products) and we aim to create meals that will equally satisfy both vegans and non-vegans alike. We take pride in our commitment to sourcing the freshest and highest quality seasonal ingredients from local farms practicing organic and/or sustainable farming in PA and NJ. We currently work with Roots to River Farm, Hand Picked Farm, Fields Without Fences, Milk House Farm and Zone 7 to bring our customers fresh vegetables, fruits, herbs & grains from many local farms in addition to foraged mushrooms from Mainly Mushrooms. While many of our dishes have global influences, our chef’s main inspiration comes from the ingredients available locally, pairing flavors and ingredients that support, contrast and highlight a particular ingredient. The result is a modern and fresh take on vegetable-focused cuisine.
Ross Olchvary was born and raised in central New Jersey, and the same creativity that attracted Ross Olchvary to art and music at an early age, also drew him towards a career as a chef. Already a vegan when his passion for food was developing, he quickly learned that he could apply his creative abilities to vegan cuisine and his dream of opening a restaurant was born even before his first restaurant job. Ross spent seven years at Horizons Vegan Restaurant (precursor to Vedge Restaurant) in Willow Grove, PA and Philadelphia, PA, as both Sous Chef and Chef de Cuisine. Sprig & Vine is Ross Olchvary’s first restaurant as Executive Chef and co-owner.
Co-owners Ross Olchvary and Melinda DeAugustines have been married since 2005 and Sprig and Vine is their vision come to life.
